Does anybody know where I could find the Omega specific flash layout (just out of curiosity in order to cross check it with the standard OpenWRT flash layout

You can find this in the DTS files for the Omega2 devices:

General Omega2: https://github.com/OnionIoT/source/blob/openwrt-18.06/target/linux/ramips/dts/OMEGA2.dtsi
Omega2/Omega2S specific: https://github.com/OnionIoT/source/blob/openwrt-18.06/target/linux/ramips/dts/OMEGA2.dts
Omega2+/Omega2S+ specific: https://github.com/OnionIoT/source/blob/openwrt-18.06/target/linux/ramips/dts/OMEGA2P.dts

Here's how you would read it:

So it would be like this:

u-boot: 192kb
u-boot-env: 64kb
factory: 64kb
firmware: remainder of flash

If you want to make the change when the device boots, you can use omega2-ctrl to change the pin multiplexing. See the ephy group here http://docs.onion.io/omega2-docs/using-gpios.html#using-gpios-multiplexing
However, if you're using a more recent version of the bootloader, GPIO43 should be set to act as a GPIO by default. Learn more about checking your bootloader version, the bootloader changelog, and updating it here: http://docs.onion.io/omega2-docs/Web-Recovery-flash-bootloader.html

It has been working great, even have the swap file on the SD card. All the info from "free" and "df" are correct. Everything I am needing the cards to do is working. Samba, webcam, LCD, OLED, GPS, all of it. But there is one issue I ran into last Friday when I wanted to update the firmware to b156. I only did it on one of the, but the one I did the most customization to. I backed up my /etc/ settings, my /root dir, my samba dir (where all my scripts are living) and the /www dir.</p>
<p dir="auto">So, with my thinking I had everything backed up, I forced the upgrade from b146 to b156. Once it rebooted, even though it saved settings in my /etc and /root dirs, everything else was wiped. So I go back, reinstall the packages, reset up the swap file and /overlay and everything is back to where it was from before I did the upgrade. Took me a few hours to redo the setups to get the swap file and /overlay and the other stuff back to my square one. But everything is back to normal now.</p>
<p dir="auto">My question is this: <strong>Can I easily swap from pivot-overlay to using pivot-rootfs so future firmware upgrades will not wipe out my work?</strong></p>
<p dir="auto">I used <a href="https://wiki.onion.io/Tutorials/Using-USB-Storage-as-Rootfs" rel="nofollow">https://wiki.onion.io/Tutorials/Using-USB-Storage-as-Rootfs</a> to set up everything (changing the path of the mount point, of course)</p>

Lastly, if I simply wanted to go back to the state of a factory new Open WRT installation and start again, how would I go about that? I ask because I have five new Omegas and intend to brick at least some of them

Look at the Wiki entry on how to reset firmware with the ethernet expansion.
Good luck!
