Working on the project with the adc expansion:</p>

<p dir="auto">So, thinking about switching out the TMP36 with the<br />
DS18B20 because it’s available with longer wires and water proof connections to its pins.</p>
<p dir="auto">Using this other project for reference on the DS18B20 for code and necessary update to schematics, such as adding a resistor to it.</p>

You should connect it to Omega2's 1-Wire Bus - ie. directly to an Omega2(+) GPIO.<br />
